National Nutrition Month

March is National Nutrition Month! Learning about nutrition is key for young children to develop healthy eating habits by making informed food choices. Proper nutrition is essential for children while their minds and bodies are developing. According to the Nationwide Children’s Organization, it is crucial to begin practicing healthy eating habits early on in your child’s life. Below are two delicious recipes to easily incorporate fruits and vegetables for the whole family to enjoy. 

Kiwi Salad Waffle Cones
Ingredients: 4 kiwis, 1 banana, ½ of mango, 8 waffle cones. 2 cups of yogurt (can be coconut yogurt to be dairy-free), lime wedges
  • Cut 2 kiwifruits into 1 cm. cubes, then slice remaining kiwifruit into long thin wedges, then place in a large bowl.
  • Slice banana in half lengthwise, then slice into half-moons. 
  • Scoop out the mango flesh from the skin, then cut into ~ 1 cm. cubes. Add to the chopped kiwifruit and gently toss to combine.
  • Spoon yogurt evenly among waffle cones, then fill cones with kiwifruit fruit salad mixture.
  • Serve immediately with spoons and a couple of lime wedges on the side to squeeze over as desired.

Popcorn Cauliflower 
Ingredients: 1 cauliflower head, almond meal, parmesan cheese, smoked paprika, dried thyme, turmeric, garlic powder, sea salt, 1 egg
  • Preheat the oven to 400°F and line a baking tray with baking paper.
  • Cut 1 head of cauliflower into florets (reserving the stalk and leaves to use for another recipe if desired).
  • Place cauliflower in a small pot of boiling water for 5 minutes until just tender. Drain cauliflower and allow to cool slightly.
  • Whisk 1 egg in a large bowl.
  • To make crumbs: combine 1 cup almond meal, ½ cup parmesan cheese, ¼ tsp. garlic powder, 1 tsp. paprika, ¼ tsp. turmeric and 1 tsp. thyme in a separate bowl.
  • Toss cauliflower through egg until evenly coated.
  • Add crumb mixture and gently combine with a spoon or your hands (take care not to over mix here as the crumb will begin to get clumpy).
  • Spread coated cauliflower evenly out over a lined baking tray and drizzle with olive oil.
  • Cook for 20 minutes, turning the pieces over halfway so that they brown evenly.
  • Sprinkle with sea salt and enjoy!
